Hakata Ramen at Yatai

Yatai (food stalls) are a must-try experience in Fukuoka. Although their

numbers declined in the past, there are still about 100 stalls operating

today. While they offer all kinds of food, you definitely have to try

Hakata ramen, which features a rich pork bone broth and thin noodles.

When you order, you can specify the noodle firmness, from yawa (soft)

to bari-kata (very firm). In the local dialect, bari means “very.” Another

unique feature is kaedama (a noodle refill).

 

Because thin noodles take only a few moments to cook, you can easily

order a refill. Just be sure not to drink too much soup before doing so.

Besides ramen, there are stalls specializing in gyoza, Western-style bars,

and more, making it hard to choose just one. These stalls have a unique

charm. Eating side by side with others in such cozy spaces creates a

warm sense of community.
